Remove the skin from the apples and cut out the core. Then cut the apples into finger-thick slices, sprinkle with a little sugar and drizzle with cherry brandy to steep for an hour.

In the meantime, mix flour, oil, 1 pinch of salt and white wine until smooth. Whip the egg whites to egg whites and fold into the batter.

For the sauce, cut open the vanilla pod and remove the pulp. Put the pulp and pod in a saucepan with the sugar and milk and bring to the boil. Mix the egg yolks with the whipped cream, remove the saucepan from the heat and immediately add the egg mixture. Stir everything well with a whisk, stir in cinnamon and strain the sauce through a sieve.

Pull apple rings through batter and bake in clarified butter until golden brown and swimming. Sprinkle with cinnamon-sugar and serve with the sauce.

Tip: Instead of clarified butter, you can also use butter in most cases.
