Instructions:

Celery remove the peel, rinse, finely cut into cubes. Make with juice of a lemon and salt in a little water two minutes, pour into a sieve, drain.

Whip the cream until stiff. Remove the skin from the apple, remove the core. Cut the apple very finely into cubes, mix on the spot with the whipped cream and the celery cubes, grate in the horseradish, mix, season with salt and leave to cool until serving.
