For the apple mustard, peel the apples, cut them into quarters lengthwise and remove the cores. Cut into 1-2 cm pieces and sprinkle with the juice of one lemon.

Heat 300 ml of apple juice with sugar and vinegar in a saucepan until the sugar has dissolved. Add one third of the apples and cook in the syrup for 5 minutes. Remove with a skimmer and set aside.

Add the remaining apples to the syrup with juice from one lemon and cook uncovered over medium heat for 1 hour until they break down. Flavor with cinnamon and orange peel zest.

Blend remaining apple juice with mustard powder and stir into apple mixture. Add poached apple pieces and cook for another 5 minutes.

Allow the apple mustard to cool and pour into a bowl.
