For the apple pie, dissolve the yeast in the milk with a little sugar. Cover and let rise in a warm place for about 10 minutes. Melt the butter and put it in a bowl with the flour, sugar and salt.

Add the milk with the yeast and knead into a smooth ball of dough. Cover and let rise for about 45 minutes. Then roll out the dough and place on a baking tray lined with baking paper, raising a rim.

Peel the apples if necessary, cut into wedges. Grate the lemon peel thinly and squeeze it out. Mix apples, 80 g sugar, some cinnamon and lemon juice and spread on the dough.

Whisk the eggs with sour cream, lemon zest and remaining sugar, pour on the apples and bake in a preheated oven at 200 °C for about 45 minutes. Sprinkle with powdered sugar.
