For the applesauce, peel, wash and core the apples. Cut into pieces and boil with caster sugar, ground cinnamon and plenty of water (apples should be covered) in a large pot.

Squeeze half a lemon and set the juice aside. Mash the cooked/soft apples and add the lemon juice.

Mix the vanilla pudding with a little water and add to the applesauce. Bring to the boil briefly and fill into glasses or eat right away.
