For the applesauce, peel apples, remove core and cut into small pieces. Simmer water, white wine, cinnamon stick and cloves for a few minutes.

Add apple pieces, sweetener (stevia powder), vanilla sugar and simmer until apples are completely soft.

Remove cinnamon stick and cloves, then puree apples with a blender. Meanwhile, heat jars and lids in the oven at 150 degrees for about 1/2 hour.

Pour the applesauce, boiling hot, into the hot jars up to the rim and seal immediately. Place with lid down and let cool.
