Belgians also grow beautiful white asparagus spears and know many delicious spear asparagus recipes. The most famous one is asparagus spears flaemish style.

Rinse asparagus spears in cold water, drain. Peel thinly from the head. Cut woody stem ends into small pieces. Heat butter in an oblong saucepan. Pour in asparagus spears. Season with salt and sugar. Pour water over them. Let the water boil. Steam asparagus for 20 minutes with lid on.

In the meantime, peel eggs. Separate egg yolks and pass through a sieve.

Heat butter in a butter pan. Stir in egg yolks. Season with salt, pepper, a pinch of nutmeg and mustard powder. Keep warm. Chop egg white into small pieces.

Remove asparagus spears from saucepan. Drain. Arrange on a heated plate. Pour the butter-egg yolk sauce over it. Sprinkle with minced egg white. Serve immediately.

Approximately 385 calories / 1611 joules.

Serve with: Ham and potatoes baked on a baking sheet. As a drink fits a white wine from the Moselle or Alsace.
