Instructions:

For the avocado dip, hard boil the eggs for eight minutes, peel and chop very finely.

Cut avocado in half, pit and scoop out the flesh. Pass avocado flesh and blue cheese through a sieve or mash finely with a fork if desired.

Mix with crushed garlic, juice of one lemon and the eggs.

Season the avocado dip with salt and pepper.
