For the cream of avocado soup, melt the butter in the pan, sweat the flour in it and stir until smooth.

Pour in the beef broth and cook for 10 minutes. Cut the avocado in half lengthwise, cut out the stone and remove the skin. Mash the flesh into puree with a fork.

Add the mashed avocado to the soup, season with salt and freshly ground pepper. Remove the soup from the heat and add the sparkling wine.

Whip the whipped cream until semi-stiff.

Pour the hot soup into soup bowls and add a tablespoon of whipped cream to each. Serve the avocado cream soup sprinkled with chopped dill.
