For the zucchini and carrot pancakes with mashed potatoes, first prepare the mashed potatoes.Wash the potatoes and boil them in their skins until soft. Peel them and put them in a pot. Add milk and butter and mash with a potato masher to a puree. Smaller pieces may remain. Season with a pinch of salt.

For the zucchini-carrot pancakes, wash, peel and coarsely grate the carrot. Wash the zucchini, remove the blossom and stem end and also grate coarsely. Place in a bowl and mix with the rolled oats and flour.

Beat the egg and season with a pinch of salt and finely chopped parsley. Heat vegetable oil in a frying pan and place the zucchini-carrot mixture in small heaps. Flatten slightly with a spatula. Fry until golden brown on one side, flip and fry on the other side. Remove the zucchini-carrot pancakes with mashed potatoes and drain on paper towels.
