Pasta dishes are always a good idea!

Why not pack the vegetables in noodle form for once: this dish tastes good even to carrot muffins and fills you up in a healthy way.

Rinse carrots, peel and cut into pieces. It’s best to shred them in a compact blender or blitz chopper – that’s when they get the finest. Mix the carrot mixture with half an egg, flour, a little salt and 50 ml of milk to a soft but firm dough. Boil salted water in a saucepan, place the spaetzle dough on a board, hold it over the saucepan and scrape it into the boiling water with a large kitchen knife. Shake the saucepan in between to make sure nothing sticks to the bottom. When all the batter fish float to the top, lift out with a slotted spoon, drain and toss in fat. Heat the remaining milk, let the de-barked cheese in cubes melt in it, season with pepper and a pinch of nutmeg and offer with the spaetz.

Make the dough thinner with the carrot juice so that it goes through the spaetzle slicer, this saves time! This meal goes very well with a crisp green leaf salad.
