Millet is one of the cereals richest in minerals: Especially iron, which is easily neglected in infant nutrition, is contained in abundant quantities. Combined with berries, it is exceptionally well utilized by the body. This flummery, for example, contains as much iron as one unit of meat. In addition, millet has an appealing light color and a mild neutral taste that appeals to young children.

If you don’t have millet flour in your pantry, you can make it from millet grains in the same way: put the relatively soft grains in the Moulinette or a hand mixer and grind them finely. (Millet flour is also an ideal binder for sauces, it never clumps).

Let the milk boil. When the milk boils, whisk the flour into the milk. Make the flammeri briefly, stirring all the time. Fold in the honey and cool the Flammeri with the lid closed, so that no skin forms. Stir occasionally if necessary so that it cools evenly. Whip the cream until very stiff and fold into the cold Flammeri. Rinse berries, loosen from stems with a fork and, mixed with the sugar, juice in about 30 minutes. Offer the berries with the flummery.
