Instructions:

For the Bacardi snow dumplings with pineapple syrup and tropical fruit, beat the egg whites, powdered sugar, lime juice and Bacardi with a mixer until stiff. Pour this into buttered ramekins or pipe small mountains into an unperforated container using a piping bag.

Cover with plastic wrap and steam for 15 minutes at 100°C.Meanwhile, caramelize the brown sugar on the stove, pour in the rum and pineapple juice and stir until the sugar has dissolved. Reduce slightly and let cool.
