For the bacon lentils with beet, first prepare the pesto. For the pesto, finely puree all ingredients in a blender. Cut zucchini, onion, beet and peeled carrots into cubes about the size of lentils.

Heat olive oil in a pan and fry bacon and vegetable cubes in it, press garlic clove into it and season with salt, balsamic vinegar and pepper.

Mix with the lentils and serve with the pesto!
