For the Baffad Masala, break the cinnamon sticks into pieces. Heat a pan (without oil) and brown all the ingredients except the turmeric, stirring constantly.

Remove from heat, stir in turmeric and place in an airtight container. Store in the refrigerator. Just before use, finely crush the desired amount of Baffad Masala in a mortar.
