For the wine dough:










Instructions:

Peel apples, remove core and cut into slices about 1 cm thick. Marinate with lemon, sugar and rum.

For the wine dough, mix egg yolks with white wine, oil, flour, a pinch of salt and lemon juice until smooth.

Beat egg whites with sugar until stiff and fold in. (The batter should not be too thin!) Pull apple slices through the batter with the help of a wooden spoon handle and bake in hot lard or oil until golden brown. When doing this, shake the pan a little or pour some hot fat over the apple slices so that they souffle nicely.

Drain on paper towels and serve sprinkled with sugar. The remaining batter can be added by the spoonful to the hot fat and baked out into wine dough fritters.
