For the baked apple with cotton candy, preheat the oven to 200 °C top and bottom heat. Grease a baking dish with butter.

Chop the nuts and put them in a bowl. Finely crumble the amarettini and mix them with the almonds, vanilla sugar and cinnamon into the nuts.

Wash the apples, pat dry and cut off a small cap from each. Cut out the core and hollow out the apples a little more, if desired.

If necessary, dice the apple flesh and mix into the nut mixture. Fill the nut mixture into the apples, spread 1/2 tsp butter in flakes on each.

Replace the lids and place the apples in a baking dish. Sprinkle with a little red sugar and drizzle with a little white wine.

Pour the remaining white wine and bake the stuffed apples in a hot oven for 30 to 35 minutes. Remove the baked apples and let them cool slightly. In the meantime, process the remaining red sugar into cotton candy.

Remove the lids of the baked apples, put some cotton candy on the apples and put the lids back on. Put a piece of vanilla bean in each fruit gum and place it on the apples as a stem.

Garnish the baked apple with cotton candy with the remaining fruit gums.
