For the baked apple with vanilla cap, peel apples and cut into narrow wedges. Sprinkle apple slices with lemon juice and place in a heatproof dish.

Melt fat and sugar in a saucepan, then bring to the boil briefly. Stir in granola and spread a good half of it over the apples. Place the pan on the rack in the lower third of the oven.

Bake for about 20 minutes at 180 °C top/bottom heat. In the meantime, prepare the vanilla topping. Separate eggs, beat egg whites until stiff.

Prepare custard powder with milk and sugar according to package instructions. Gently but thoroughly beat in beaten egg whites and yolks with a whisk.

Spread mixture over apples after first 20 minutes, sprinkle remaining granola mixture on top and bake for about 30 minutes more.

Arrange the baked apple with vanilla topping and serve.
