PREPARATION Preheat the oven to 200 °C. PREPARATION Mix the honey with lemon juice and banana liqueur. Peel the bananas and sprinkle with this marinade. Spread the strudel dough on a floured kitchen towel and cut it into two 20 x 20 cm squares. Brush with a little butter, place the marinated bananas on top and fold the strudel dough well. Brush again with a little butter and place on a greased or parchment-lined baking sheet. Bake in the preheated oven at 200 °C for about 10 minutes. Meanwhile, for the sabayon, beat the egg with the yolks, milk and cocoa powder in a kettle over steam until foamy. Add peppermint liqueur, whisk vigorously again. Remove from the bain-marie and chill a little longer. Pour sabayon into deep plates and place baked banana on top. Garnish with mint and sprinkle with powdered sugar.
