For Baked Fennel with Orange Fillets, wash the fennel, boil in salted water until tender and cool quickly in iced water. Dry on a paper towel. Fillet the oranges and arrange on plates.
Simmer orange juice with sugar until syrupy, remove from heat and add butter flakes.
Stir wine, egg yolks, flour and a little salt to a paste. Beat egg whites until stiff and fold in. Cut the fennel into small pieces, dip them into the dough and fry them in hot (180° Celsius) fat. Turn in cinnamon sugar.
Pour lukewarm sauce over the orange fillets, arrange the fennel on top and add a scoop of ice cream.
Finally, sprinkle Baked Fennel with Orange Fillets with powdered sugar and decorate with mint leaves.
