For the Banana-Almond Minion Muffin, sift the flour with the baking powder and baking soda. Preheat the oven to 160 °C.

Cream soft butter with sugar and mix in the egg. Whisk in the cinnamon, yogurt, mashed bananas and ground almonds, and finally add the flour mixture.

Pour batter into a muffin tin filled with muffin cups, filling cups to about 1 inch below the rim.

Bake banana-almond mini-minions muffin for 20 minutes on middle rack, test for doneness, and then let cool on a cooling rack.

For the decoration, make mini minions. To do this, cut white marshmallows straight down one side so they can stand on a smooth surface.

Mix one egg white with powdered sugar, citric acid and yellow food coloring with a hand mixer for 5 minutes on low speed. Dip the marshmallows into the mixture and set aside to dry.

Meanwhile, smooth the top of the cooled cupcakes. Roll out blue rolled fondant thinly and cut out a circle for each muffin using a circle cutter, or a glass. Brush this with a little water to make it stick and use it to cover the cut surface on the muffin.

Cut thin strips, about 6 millimeters wide, from the leftover rolled fondant and use them to make little blue pants for the Minions. Place the panties on the bottom of the Minions again.
