For the banana cake with chocolate chips, separate the eggs and beat the egg whites with 100 g sugar until stiff. Then whisk the yolks with the room-warm butter, the remaining sugar and the rum until foamy.

In the meantime, peel the bananas, put them in a bowl and mash them with a fork. Add the bananas and the dark chocolate chopped into small pieces to the yolk mixture and stir.

Finally, fold the flour and baking powder into the banana mixture, alternating with the beaten egg whites. Grease a loaf pan, add the mixture and bake at 175 °C for about 1 hour.
