For the banana-coconut muffins, beat egg whites until stiff peaks form. Cream butter, sugar, vanilla sugar, yolks and rum. Mix in the mashed bananas. Carefully add coconut flakes, chocolate flakes, flour with sifted baking powder and finally the snow.

Pour the mixture into the muffin cups (fill the cups about halfway). Bake the banana coconut muffins at 160°C for about 20 minutes.
