For the barbel fillets with elderberry noodles, wash the barbel fillets and rub with salt and pepper. For the sauce, soak the porcini mushrooms in a little water. Fry the finely chopped onion in a little oil.

Squeeze the soaked porcini mushrooms (save the water for later), chop and add. Deglaze with white wine and soaking water. Add salt and pepper. Let simmer.

Sauté the barbel in a little olive oil with the herbs and garlic until the fillets are cooked through and the herbs are crispy. Meanwhile, cook the elder pasta in salted water until al dente.

Refine the sauce with crème fraiche and serve the barbel fillets with the elderberry noodles.
