Instructions:

Soak the barley overnight in about 1 liter of cold water. The next day, boil in water with half the onion, bay leaf and carrot for about 35 minutes. Strain the barley, rinse and drain well. Add a little salt. Slightly score the skin of the tomatoes, dip them briefly in hot water – then in cold water and peel off the skin. Remove the seeds from the tomatoes and cut them into cubes. Cut the peppers into small cubes and mix everything with the barley. Mix nut oil, wine vinegar, sugar, salt, pepper and a little water to make a marinade. Mix it with the barley and let it marinate for an hour. Before serving, sprinkle with freshly chopped flax.
