For the spelt shortbread, quickly knead all dough ingredients in a food processor or by hand until smooth. Wrap the shortcrust dough in plastic wrap (a freezer bag is best) and chill.

After one hour, remove from the refrigerator, knead and roll out on a floured work surface.

Cut out shapes as desired and place on baking paper, and bake in a preheated oven at 160 degrees top/bottom heat for about 10 minutes (longer or shorter depending on size).
