For the beef, let the thoroughly washed beef stand in plenty of cold water for half an hour. Boil the quail eggs for 7 minutes turned down so that the egg yolks get into the center.

Boil the meat in 6 cups of water, carefully skimming off any foam that forms on the surface of the water with a spoon.

When the meat is almost tender, remove it and let it cool. Save the meat broth.

Cut the cooled meat into thin strips in the direction of the grain.

Add the spice sauce ingredients and the peeled quail eggs to the meat broth and bring everything to a boil.
