Salt and pepper the well cleaned steaks. Heat some oil in a pan and quickly sear the steaks over high heat, reduce heat and finish cooking to desired doneness. Meanwhile, chop the porcini mushrooms into bite-sized pieces if desired. Melt some butter in a saucepan and fry the porcini mushrooms in it. Remove the mushrooms, mix with the lentil sprouts and season with salt and pepper. Marinate with a little balsamic vinegar. For the wasabi horseradish sauce, mix the mayonnaise with Dijon mustard, wasabi horseradish, soy sauce and oyster sauce until smooth. Arrange the porcini sprout vegetables on plates and place a steak on each. Add the sauce and garnish with cress.
