For the beef sugo, cut the shallot, garlic and vegetables into small cubes. Heat olive oil in a pot and sauté shallot, garlic and root vegetables.

Add bread spice, cinnamon, oregano, sugar, salt and pepper, fry for 7 minutes. Add beef and stir-fry.

Deglaze with a shot of red wine, pour in soup, add bell bell pepper and diced tomatoes, cocoa and espresso, cover and simmer on low heat for about 40 minutes.

Season the beef sugo with salt and chili.
