For the beefsteak, salt and pepper the beef fillet, drizzle with a little oil and let rest for 1/2 hour. Heat oil, fry beef fillet on both sides for 4-6 minutes over high heat, depending on thickness.

The fillet must still be red inside. Wrap roasted beef fillet in aluminum foil and let rest for a few minutes. In the meantime, fry fried eggs, season with salt and pepper.

Serve the beef fillet with the juices spilled in the aluminum foil and fried egg. Serve with potatoes sprinkled with fresh thyme leaves.
