Clean and rinse the zucchini and peppers. Clean and peel the carrots. Cut the vegetables into strips.

Melt the butter in a frying pan and sauté the vegetables in it. Pour 80 ml of water on top and cook everything together at low temperature for 5 to 8 minutes until al dente. Season with the vegetable soup.

In the meantime, knead the mince with the salt and shape it into 4 flat steaks. Fry them in hot oil for about 5 minutes on each side.

Remove the peel from the onion, cut it into thin rings and fry it briefly.

Arrange the vegetables together with the minced steaks and the onions on two plates and sprinkle with the parsley.

Tip: The flesh of young, small zucchini is much more tender than that of larger ones.
