Instructions:

For the blackberry foam, crumble cookies and divide among 4 to 5 glasses. (Glasses for about 150 ml) Wash and sort blackberries. Mix curd cheese with grated lemon peel and lemon juice.

Bring agartine to a boil with the blackberry syrup and cook for about 2 minutes (according to instructions on the package). Then mix the hot liquid with the curd and half of the blackberries and pour into the glasses.

Spread the rest of the blackberries on top of the mousse, let it set in the refrigerator. Serve cold.
