Instructions:

For the blackberry foam slices, first prepare the sponge dough.

For the sponge dough, beat the eggs with the sugar and vanilla sugar over steam until very foamy. Then remove from the steam and beat until cold.

Gently fold in the sifted flour. Finger high spread a rectangle on baking parchment and bake at 190 degrees (preheat) for about 12 – 15 minutes until golden.

For the orange cream, boil the juice and grated orange peel, powdered sugar and butter. Quickly whisk in a beaten egg.

Pour everything through a sieve and let cool. Stir again and again with the whisking rod.

Remove the sponge cake from the paper, place it on a baking tray and spread with the cooled orange cream.

For the snow topping, whip the egg whites with a third of the granulated sugar until snowy, add the remaining sugar and continue to whip.

Finally, stir in the sifted powdered sugar. Spread the orange cream with a little snow and top with the blackberries.

Using a serrated nozzle, pipe the remaining snow over the top and brush the edge with the egg foam. Now sift a little powdered sugar over the top.

Let it color slightly in the oven at high heat (better grill setting). Take out and let cool down.

Divide the blackberry foam slices into portions.
