For the blueberry pancakes, mix the flour with sugar and salt. Melt the butter and separate the eggs. Mix the yolks with the butter, add the buttermilk, lemon zest and vanilla sugar and stir in.

Stir in the flour mixture as well. Beat the egg whites until stiff and fold in until everything is well combined. Let sit for about 15 min and then fold in the blueberries, crushed a bit.

Put some butter in a non-stick frying pan and heat. Fry the pancakes one at a time, preferably two at a time. The pancakes are ready to flip when bubbles form on the surface.

Then flip and finish on the second side.
