For the braised bacon shallots on skewers, first heat a small pot and melt the sugar in it. Add the shallots whole and stir briefly. Deglaze with red wine and vinegar. Add herbs, garlic cloves and butter and let it boil down for about 10 minutes. Season to taste with salt and pepper. Cool and drain a little.

Wrap 1-2 slices of bacon around each shallot. Repeat with all shallots and put 3-4 pieces each on a wooden skewer. Roast on the grill or in the oven at 220 °C for about 5-8 minutes until crispy.

Finally, drizzle the braised bacon shallots on the skewer with some braising liquid and serve.
