Try this delicious pasta dish:

Cut each slice of meat into 4-5 pieces and season with pepper and crushed garlic. Peel the celery and carrots. Cut celery into strips, carrots into slices. Peel onions and cut into quarters.

Heat clarified butter in a large frying pan. Brown meat in three portions over high heat. Salt.

Add celery, onions and carrots and sauté. Add red wine and mustard. Steam everything in the closed frying pan at medium heat for one hour. If necessary, add a little clear soup in between.

Season the sauce with salt and freshly ground pepper and sprinkle with chives.

Serve with ribbon noodles
