Instructions:

Cook the pesto: Finely chop all ingredients except olive oil, salt and pepper in a food processor.

finely chop in a food processor. Add olive oil drop by drop and season with salt and pepper. set aside.

Preheat oven to 175 degrees. Heat a cast iron skillet over medium-high heat for 8 minutes. Combine chili seasoning, curry, salt and flour in a shallow baking dish. Pour melted butter into another shallow baking bowl, drag salmon pieces through butter, then roll in flour mixture. Place in hot skillet and sear 2 to 3 minutes on each side. Remove from skillet and bake in oven for 5 min. Salmon pieces should be served “medium” if possible.

Place fillets on warmed plates and drizzle with the pesto.
