Instructions:

whisked whole egg mixture, bread in ground white bread and fry in olive oil with salt and pepper until crisp.

Blanch the broccoli roses and the rest of the sliced spring onions in salted water, drain and toss in butter with salt, pepper and a hint of nutmeg.

Cut the cleaned mushrooms into strips, sauté in olive oil with salt and pepper, deglaze with clear soup and finish with whipped cream and chopped chives.

Arrange everything on a flat plate and garnish with chive stalks.
