Prepare the bagels the day before or very early (or use purchased bagels). Whole grain bagels are especially good for this recipe!

Fry the bacon in a pan without oil until crispy, remove and drain on paper towels.

Beat the eggs and season with salt and pepper. Either empty into the pan with the remaining fat from the bacon, or put into a new pan with a little oil or butter. Allow to set and then stir through with a spatula.

Toast bagel if desired, cut open and top with bacon slices and egg mixture.

Serve the breakfast bagel warm.
