For Brioche Burger Buns, put yeast, sugar, lukewarm milk and 1 tablespoon of the flour in a bowl, mix well with a whisk, cover with cling film and let rest in a warm place for 15 minutes.

Put the flour, egg, salt and the yeast mixture in a mixing bowl and knead well for 5 minutes. When a homogeneous dough is formed, add the butter and continue kneading until an elastic, firmer dough is formed (add a little flour if necessary). Cover dough with a kitchen towel and let rise in a warm place for 1 hour.

Form dough into a thick roll on a floured work surface and portion into 8 equal pieces with a dough card. “Grind” each portion into a ball: To do this, loosely turn the dough ball between the hollow of your hand and the work surface until a smooth surface is formed. Place dough balls, not too close to each other, on a baking sheet lined with baking paper and let rise again for 20 minutes.

Preheat oven to 180 °C convection oven.

Brush the dough balls with the milk – egg mixture and sprinkle with sesame seeds. Bake the brioche burger buns for 20 minutes.
