For the brown drunken capuchin, beat egg whites until stiff peaks form. Grate chocolate. Butter a medium cake pan and sprinkle with breadcrumbs.

Beat yolks and sugar until very foamy, add chocolate and crumbs and mix well. Fold in the stiffly beaten snow.

Pour the mixture into a prepared Gugelhupfform and bake at 170 degrees convection oven for about 40 minutes. Test with a needle.

Turn out the Gugelhupf from the mold, let it cool and pour mulled cider over it.
