For the green asparagus cake, beat the yolks, sugar and vanilla sugar until creamy. Add water and oil until fluffy.

Add the flour, baking powder and cocoa mixture and fold in the snow. Spread on a baking tray and bake at approx. 185 °C for approx. 1/2 hour.

For the crumble, knead butter, flour, sugar, cinnamon, well so that the dough becomes crumbly. Add the asparagus cut into small pieces.

Quickly spread the crumble with the asparagus on the pre-baked cake and bake again for about 1/2 hour.

For the b’soff version, cut the cake into pieces and pour a little Velsecco over them just before serving.
