Gently toast the flour in a pan over low heat until it begins to smell pleasant and take color.

At the same time, boil the salted water.

Stir the hot water gradually (preferably with a spoon) into the flour in the pan: However, always add only as much water as the flour can just absorb.

Crumble the mixture with two forks to form small lumps. Cover the pan, remove from heat and let stand on the warm edge of the stove for about 30 minutes.

Fry the bacon in a hot pan (without adding any additional fat!).

Arrange the Sterz on plates or in small bowls, drizzle with the rendered fat and sprinkle with the crispy bacon cubes. Allow to stand for a few minutes before serving.
