Heat a little buttermilk and melt the pre-softened, properly squeezed gelatine in it, add it to the rest of the buttermilk.

As soon as the mixture begins to gelatinize, fold in the stiffly whipped cream and half the amount of the kitchen herbs and season with salt, lemon and pepper.

Cover a baking dish with cling film (previously soaked in tap water) and pour in the mixture, smooth it out and let it cool for 3-4 hours.

To turn out, place the dish briefly in tap water. Cut the terrine into thick slices with a warmed kitchen knife.

Make a salad dressing with the remaining herbs, dress up with shrimps or alternatively lobster tails, which are dressed ditto in this salad dressing.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
