Remove crusts from toast, cut and soak in a little milk.

Mix squeezed bread with meat, yolk, parsley and whipped cream. Season with salt, pepper, nutmeg and lemon zest.

Form small oval loafs from the mixture and fry the butter cutlets in the oil-butter mixture over medium heat for about 4-5 minutes on each side.

Drain briefly on paper towels and serve.
