For the cabbage soup “Asia Style” first cut the cabbage head in half, remove the stalk and cut into fine strips. Peel and finely chop the carrot (in strips), onions, lemongrass and garlic. Prepare green tea. In a spacious pot, heat the oil, add carrots, onions, garlic and sweat briefly. Add white cabbage and fry briefly. Remove the pot from the heat, add paprika powder, lemongrass, freshly grated ginger, chili pepper and cumin and stir through. Pour in vegetable stock and green tea. Simmer on low heat for 20 minutes. Before serving the cabbage soup “Asia Style” remove the chili pepper and season again.
