For the candied cherries, dab washed, pitted cherries dry. Preheat oven to 100°C, let cherries dry in turned-off oven.

Mix sugar with water and bring to a boil, stirring constantly. After 3 minutes, add lemon juice, boil for another 2 minutes.

Put cherries in sieve, pour cooled syrup over them, strain and drain. Cover baking tray with baking paper, spread cherries on it without them touching. Allow the candied cherries to dry.
