Preparation (about 40 min):

Soak raisins in orange juice. Mix flour with a sugar, pinch, egg yolk salt and milk to a semi-liquid smooth dough.

Pour the dough into a frying pan with hot clarified butter in a thin layer. Bake until golden brown on both sides, cool.

Gently mix curd with lime zest, one egg yolk, vanilla sugar and beaten egg whites, fold in vanilla pudding powder and raisins. Brush the mixture onto prepared pancakes, roll up and place in an ovenproof dish.

Mix sour cream or crème fraiche with sour cream and vanilla sugar, pour it on the side of the pancakes. Sprinkle everything with brown sugar.

Spread the orange zest evenly over the top and bake in a heated oven at 160 degrees for 20 to 25 minutes.

Cut the pancakes in half diagonally, garnish with lemon balm and serve in the dish.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
