For the carrot and kohlrabi salad, first fillet the oranges: Peel off the peel including the white inner skin, collecting the juice. Then remove the orange segments from the thin membranes and also collect the juice.

Wash, clean, peel and cut the carrots and kohlrabi into sticks.

Wash and finely chop the parsley.

Mix the carrots and kohlrabi in a salad bowl, season with salt and pepper and sprinkle with the orange fillets and raisins.

Pour the juice of the orange over it and drizzle with olive oil.

Serve the carrot and kohlrabi salad sprinkled with freshly chopped parsley.
