Stir carrots and apples cut into thin strips with the marinade of whipped cream, juice of one lemon and spices. Stir in hazelnuts and raisins if desired. Garnish with parsley.

Decorating tip : Since carrots have a very firm flesh, they are excellent for vegetable decorations:

Carrot sticks: to do this, cut a carrot into fine sticks and then tie them together with chives. Makes an exceptionally decorative addition to vegetable platters.

Carrot Rolls: Use an asparagus peeler to peel paper-thin, elongated strips. Roll up the strips and tie with chives.

Carrot balls: Using a baller, twist balls out of a carrot with even pressure.

You can also use the leftovers: Either grated as a leaf salad or pureed for a soup. Cut out vegetable shapes: Cut carrots into slices and cut out any shape with small cookie cutters. Especially pretty as a soup garnish.

Tip: Always use aromatic spices to refine your dishes!
